Open-Faced Sandwich with Peppery Arugula, Marinated Artichoke Hearts, Egg, and Drizzled with Balsamic Reduction


INGREDIENTS

arugula
marinated artichoke hearts
2 eggs
balsamic reduction
two slices of whole wheat bread

DIRECTIONS

Toast two slices of whole wheat bread and place on plate. Add arugula and marinated artichoke hearts on top of each slice of bread. Cook two eggs sunny side up and lay on top of the arugula and artichoke hearts. Finally, drizzle some balsamic reduction over the eggs, and enjoy!
