Braised Chicken and Eggs

I have revamped my usual recipe by adding star anise, sesame oil, and lemongrass, and it definitely tastes better than my old recipe. I will be making my braised chicken and eggs this way from now on!

INGREDIENTS

6 Boneless chicken thighs
6 Hard boiled eggs
2 Tbsps sugar
1 Tbsp lemongrass
2 Tbsps Light soy sauce
2 Tbsps Dark soy sauce
2 star anise
1 tsp sesame oil
Water

DIRECTIONS

Season the chicken with some salt and the lemon grass and set aside.

In a pot, add the sugar and allow it to melt over medium-high heat. Once the sugar has become caramelized, add the chicken in and stir to coat. Next, add the light soy sauce and dark soy sauce, and continue to stir until the chicken is well coated and cooked through.

Now, add enough water to just cover the chicken. Add star anise and sesame oil. Allow the chicken to simmer over low heat for about 10 minutes. Make sure to taste for additional seasoning! (Either more soy sauce or sugar, depending on your individual taste.)

Finally, add in the hard boiled eggs and allow it to simmer until the eggs are a nice brown colour.

Serve with a bowl of rice and some sliced cucumbers.
