First, start off by dicing up the apple, onion, and carrot, and set aside. To make the curry, in a sauce pan at medium high heat, add a tablespoon of oil and saute your onions first until they become somewhat translucent. Next add apples, carrots, and about a tablespoon of maple syrup, and stir so that everything is well coated and apples are somewhat caramelized. At this time, add water and Japanese curry block, and stir until the curry block is completely dissolved. Season with some ground peppercorn.
Bring the curry to a boil and then reduce to a simmer, cover with lid, and allow it to cook for about 10-15 minutes or until the carrots have softened. While the curry is simmering, make your egg omelet and set it aside. For the sausage, I used smoked sausages and scored the sausage with a bunch of “X’s” and cooked it on a pan. Once sausage is cooked, removed and set aside.
To assemble, put rice on half of a large deep plate. Place the omelet next to the rice, along with the sausage. Ladle some of the curry into your bowl and enjoy!.
